Golden Turmeric Overnight Oats

A five-minute evening ritual that becomes a warm-toned, creamy breakfast — gently spiced, naturally sweet, and ready before you are.

Ingredients

  • 50 g rolled oats
  • 150 ml unsweetened almond milk
  • 100 g plain Greek yogurt
  • 1 tbsp chia seeds
  • ½ tsp ground turmeric
  • ¼ tsp cinnamon · pinch of black pepper
  • 1 tsp honey or maple syrup
  • ½ ripe banana, sliced
  • To serve: toasted coconut, a few walnuts

Method

  1. In a jar or small bowl, stir together the oats, chia seeds, turmeric, cinnamon and a small pinch of black pepper.
  2. Add the almond milk, yogurt and honey. Stir well until everything is evenly combined and golden in colour.
  3. Cover and refrigerate overnight — or for at least four hours — until thick and creamy.
  4. In the morning, loosen with a splash of milk if you like. Top with banana, toasted coconut and walnuts.

Substitutions

Dairy-free? Swap Greek yogurt for coconut or soy yogurt. No chia? Use ground flaxseed. Gluten-sensitive? Choose certified gluten-free oats.

Oats and chia provide slow-release carbohydrate and fibre, while Greek yogurt contributes around 10 g of protein per serving — a combination designed to support steady morning energy and comfortable fullness.

Mediterranean Salmon Bowl

Roasted salmon over lemony quinoa with cucumber, olives and a cool herbed yogurt — the kind of lunch that feels like a coastal holiday.

Ingredients

  • 2 salmon fillets (about 130 g each)
  • 120 g quinoa, rinsed
  • 1 lemon — zest and juice
  • 1 cucumber, diced · 10 kalamata olives
  • 150 g cherry tomatoes, halved
  • 150 g Greek yogurt · 1 small garlic clove
  • Fresh dill and mint · olive oil
  • Sea salt and black pepper

Method

  1. Heat the oven to 200°C (390°F). Season the salmon with olive oil, lemon zest, salt and pepper.
  2. Roast for 12–15 minutes, until the salmon flakes easily but is still blushing at the centre.
  3. Meanwhile, cook the quinoa. Fluff with a fork and fold in the lemon juice and half the chopped herbs.
  4. Stir the grated cucumber, garlic and dill into the yogurt with a pinch of salt to make a quick tzatziki-style sauce.
  5. Build each bowl: quinoa first, then salmon, cucumber, tomatoes and olives. Finish with the yogurt sauce and a flourish of olive oil.

Substitutions

No salmon? Trout or sea bass roast identically. Swap quinoa for bulgur or brown rice. For a dairy-free sauce, use a tahini–lemon dressing instead.

The Glow Bowl

Caramelised roasted vegetables, herbed quinoa and a tahini-lemon dressing you'll want to keep in the fridge forever.

Ingredients

  • 1 small sweet potato, cubed
  • 2 courgettes, thickly sliced
  • 1 red pepper, in strips
  • 1 red onion, in wedges
  • 120 g quinoa, rinsed
  • 80 g baby spinach
  • 60 g feta, crumbled (optional)
  • 2 tbsp pumpkin seeds
  • Dressing: 2 tbsp tahini, 1 lemon, 1 tsp honey, 2–3 tbsp warm water

Method

  1. Heat the oven to 210°C (410°F). Toss the vegetables with olive oil, salt and smoked paprika on a large tray.
  2. Roast for 22–25 minutes, until the edges are deeply caramelised, turning once.
  3. Cook the quinoa, then fold the spinach through while it's still warm so it wilts gently.
  4. Whisk the dressing ingredients until smooth and pourable — add water gradually.
  5. Assemble: quinoa and spinach, roasted vegetables, feta, pumpkin seeds, and a generous ribbon of dressing.

Substitutions

No tahini? Use a simple olive oil and lemon vinaigrette. Swap quinoa for bulgur or brown rice. For a fully plant-based bowl, leave out the feta and add a spoon of hummus.
